I já tinha proposto uma receita de pães curtos há mais de dois anos (receita AQUI). Ainda adoro os primeiros… Mas hoje dou-vos uma nova versão que é realmente a minha favorita! Desta vez são cozidos num molde, são mais finos e dourados e especialmente têm muito gengibre, o que lhes dá um sabor único. Estes pães curtos são realmente deliciosos e todos os que os provaram adoraram-nos… A sua fabulosa textura e gengibre fazem uma versão explosiva destes famosos bolos escoceses…
Receita para biscoitos de gengibre:
-80g de açúcar -160g de manteiga com sal -200g de farinha -40g de farinha de arroz (se não conseguir encontrar farinha de arroz, então pode usar 240g de farinha clássica!) -2 colheres de chá de gengibre em pó -3 fatias de gengibre cristalizado
Pré-aquecer o forno a 170°C.
Colocar a manteiga com sal suave e o açúcar numa tigela.
Misture bem para obter uma espécie de creme (com a folha, o “K” se tiver um processador de alimentos!).
Misturar a farinha, a farinha de arroz e o gengibre em pó.
Adicionar a mistura de farinha ao creme de manteiga-açúcar. Misture até obter uma pasta macia sem insistir.
Cortar o gengibre cristalizado em cubos muito pequenos.
Acrescentá-los à massa e misturá-los rapidamente.
Enrolar a massa para uma bola.
Colocar a massa num molde quadrado de 20X20cm forrado com papel vegetal.
Aplainar a superfície com a parte de trás de uma colher.
Polvilhar a parte de cima da massa com açúcar, e depois fazer buracos (aqui fi-lo com um pauzinho).
Cozer durante 35-40 minutos (ou mais) para obter uma bela pastelaria dourada. É preciso estar atento porque cada forno cozinha de forma diferente Cortar os pães curtos enquanto a massa ainda está quente, será muito mais fácil.
Sair quando os pães curtos tiverem arrefecido. Armazenar numa caixa hermética.
