Continuamos juntos a explorar as maravilhas do“Délice de la Casbah“, desta vez com os babuches de amêndoa. Maravilhosos charutos feitos de massa de massa quebrada, recheados com maçapão, todos mergulhados em mel para uma boa conservação e um sabor sem igual. Não há grandes dificuldades nesta receita! Para ser apreciado com um chá de menta.
Receita para cerca de trinta babuches de amêndoas:
-1kg de pó de amêndoa -500g de açúcar -5 ovos -2 colheres de chá de baunilha líquida
Colar -500g de farinha -200g de manteiga -water
– mel líquido ou ligeiramente aquecido -30 amêndoas inteiras com pele
Comece por preparar a massa. Coloque a manteiga e a farinha na tigela de uma batedeira equipada com o “k”, ou simplesmente numa tigela grande, se não tiver uma.
Começar a misturar para lixar completamente. É preciso ir devagar para ver como a farinha absorve bem.
Misturar. A massa deve ser bastante macia mas não pegajosa.
Colocar a bola de massa num local fresco em película aderente durante 30 minutos se a manteiga estivesse fria, caso contrário, uma hora.
Misturar a amêndoa em pó e o açúcar.
Misturar numa mesa grande ou num recipiente de mistura de um processador de alimentos do tipo “kitchenaid”. Cavar um poço e adicionar os ovos.
Acrescentar a baunilha líquida.
Comece a misturar os ovos com a baunilha.
Em seguida, amassar a mistura até formar uma espécie de maçapão.
Estender a massa bastante fina até 2 mm de espessura sobre uma superfície de trabalho enfarinhada.
Cortar círculos com um cortador de 9cm de diâmetro.
Enrolar o maçapão num rolo de 3 cm de diâmetro e cortar em pedaços de cerca de 3 ou 4 centimetros.
Enrolar as peças em grandes bolas e colocá-las na base dos círculos de pastelaria.
Comece a rodar tal como se mostra na fotografia.
Fixar a massa no canto superior e baixar a ondulação, o que criará um pequeno ângulo no topo do círculo, como mostrado na foto.
Rolar sobre a superfície de trabalho com as mãos para baixo no rolo. Colocar as pantufas num tabuleiro forrado com papel vegetal.
Pincelar o ovo batido com um pincel.
Empurrar uma amêndoa inteira para a parte superior no meio.
Cozer a 190°C durante 15 a 20 minutos, depois colocar directamente no mel e deixar de molho durante 15 minutos.
Colocar as pantufas a escorrer.
Servir com chá de menta! Os “babuches de amêndoa” podem ser mantidos durante cerca de 10 dias.
