Bonjour et une seul mot MERCI ! après x tentatives avec un four capricieux et d’autre recettes la votre m’a permis le succès au premier essai. Avantage pas de temps de croutage et une seule remarque : vous n’indiquez pas comment et quand battre les autres 50 gr en neige . Alors j’ai battu les 50+60 tout ensemble et j’ai réservé 50 gr à part avant de faire la meringue à l’italienne et ça a marché . L »aspect des coques est superbe toutefois la colerette est un peu retombée.C’est le seul bémol.

Bonjour, merci pour toutes ses belles recettes , pour les macarons vanilles par quoi peut on remplacer l’oxyde de titane ? Sans que ce soit quelque chose de chimique ou controversé come le titane ?
Pour les autres macarons , qu’elles sont les poudres naturelles colorantes qui fonctionnent bien ? ( Macha pour le vert ? Curcuma pour le jaune ? Betterave pour le rouge ? ..)
