Les espagnols les coupent en rondelles aussi et versent dessus du miel de cana (plutôt mélasse, ce sirop de canne à sucre très foncé) qui s'accorde merveilleusement avec les aubergines. Si vous n'en trouvez pas, vous pouvez remplacer par du sirop d'érable : le goût se rapproche du miel de cana. C'est vraiment délicieux comme tapas !
