J’ai récemment acheté votre livre et pensais tester une des premières recettes qui y figure… l’amandier.
Ce soir, je regarde votre site pour voir si des conseils supplémentaires y figurent et je vous une recette qui semble différente : plus de poudre d’amande, moins de sucre, moins de beurre… je suis étonnée puisque ces différences ne sont pas due au nombre de parts, mais changent la texture du gâteau… pouvez-vous m’éclairer?

Bonjour Bernard j'ai testé votre recette mais dans un moule a tarte et quand le suprême a été cuit mon gâteau était plat.
j'ai l'habitude de faire de la cuisine et je ne comprend pas la raison
les blancs ont été incorporés délicatement alors je ne comprends pas.

Sans faire exprès j'avais mis plus de vanille j'ai cru que cela aller changer le gout et finalement c'était parfait le bon gout d'amande dans les premières bouchées et la vanille en fin de bouche c'était top !
En fait c'est un gateau rapide, facile mais qui impressionne ! Tout ce qui faut quoi ! 😀

J'ai mis 2/3 du sucre indiqué cela était très suffisant à mon goût. Je le ferai avec des variantes de parfum VAE c'est une excellente base : rhum, Limoncello, zestes de yuzu…
