J'ai fait 100% gruyère français.
Pour la cuisson, je n'ai qu'une cuisinière gaz avec chauffage uniquement par le bas et ça n'a causé aucun soucis. J'ai enfourné presque tout en bas (pour laisser assez de hauteur pour le gonflage).
Je me demande même si le fait de chauffer uniquement par le bas ne renforce pas le gonflage car mon soufflé était magnifique.
A méditer pour les fours multifonctions qui ont une option "cuisson par le bas".

Sur le votre Bernard il dépasse même du bord du moule. Je me demande pourquoi est-ce un problème par rapport à mes
œufs en neige ? Ou autre ? Par contre niveau goût c était réussi. En tout cas félicitations pour votre site j'adore ! et j ai même vos deux livres.
