Bonjour Bernard!
Je voulais juste vous dire que je fais votre recette chaque année, depuis le jour où vous l’avez publiée.
Je me contraints à ne la faire qu’entre novembre et janvier (plusieurs fois). Parceque pour moi elle sonne « l’hiver, le froid, le mug de café fumant et les fêtes de fin d’année qui arrivent ».
Chaque année, dès Novembre, les enfants, mon mari et mon entourage proche me demandent: « c’est maintenant que tu fais le pain d’épices de Bernard? »..
Et je souris tendrement, parce que oui, c’est MAINTENANT!
Je me suis rendue compte que je n’avais jamais pris le temps de commenter et de vous remercier pour ce partage précieux.

d’abord merci pour ta recette du pain d’épices, elle est super .
Je l’ai faite avec de la farine de seigle mais par après j’ai vu que ma farine était « farine de seigle complète » ce qui a changé la texture j’ai dû rajouter du lait presque le double, et de ce fait j’ai dû cuire un quart d’heure de plus à 150° mais bon je crois que c quand même réussi peut être une texture plus compacte vu farine complète et sans doute moins sucré . D’après tes photos, toi tu as pris de la farine de seigle non complète je présume? Si on utilise de la farine complète, quel proportions exact prendre.
