J’ai d’emblée doublé les proportions de la génoise pour un moule d’env 28 cm de diamètre et c’était parfait. J’ai aussi augmenté les quantités pour préparer la crème car ça ne me semblait pas suffisant, le problème c’est que je me suis retrouvée avec une crème beaucoup trop liquide alors que j’avais calculé les proportions de gélatine en fonction. Du coup j’ai rajouté du agar agar car il ne me restait plus que ça, la crème s’est un peu solidifiée mais n’a pas vraiment durci. Verdict demain à la sortie du frigo mais je peux d’ores et déjà dire que le gâteau sera mangé rapidement même si la crème n’aura pas pris !
