Je ne peux plus manger de pâtisseries à base de crème mousseline dans aucune pâtisserie que j’ai testée de ma région ; pour eux tous la crème mousseline n’est que pâtissière et beurre !
Chaque fois que je veux un moka ou un paris-brest ou un fraisier je dois agir seule et c’est bien triste allez ! C’est quand même du taf !
Je vous supplie de breveter votre recette et d’obliger toutes les formations en pâtisserie à l’enseigner ! Je viens même de me disputer avec le dernier pâtissier qu’il me restait à tester sur la qualité de sa crème mousseline !
Mon Dieu… y’a plus d’valeur ! 😀
A moins que cette crème si douce et légère porte un autre nom. Si je le connaissais bien des duels me seraient épargnés. Merci en tous cas pour tous mes kilos et le plaisir de nos papilles (je nourris tout le quartier)

Je suis une adepte de vos recettes mais celle ci; vraiment trop de beurre pour nous, la crème au beurre est devenue un bloc après une nuit au frigo et donc le gâteau d’anniversaire de ma fille était inmangeble et a fini à la poubelle.
Malheurheureusement je n’avais pas lu les commentaires et quasiment tout le monde est unanime là dessus… je déconseille

La deuxième fois, j'ai bien fouetté les temps indiqués (en mettant le chronomètre pour être sûre!), j'ai mis seulement 230g de beurre et j'ai choisi du beurre tendre (en me disant qu'au moins il ne durcirait pas). Je ne sais pas quel facteur a tout changé (ou les 3?) mais le fraisier était divin… Tous les convives ont été bluffé et en effet, ce fraisier pouvait concurrencer ceux des boulangeries!
