J’ai remplacé la poudre de noisettes par de la farine de noisettes et fait une pâte brisée presque classique. Un mélange de champignons à majorité shiitakés et à la sortie du four, un délice. J'ai testé il y a une dizaine de jours et tout le monde s'est régalé. Recette à refaire, ça a été unanime. Je l'ai faite avec un cercle de 24cm mais un peu moins haut que le tien d'après la photo, c'est tombé juste bien au niveau au niveau remplissage. Personnellement je trouve des Shiitakés frais sans problème tout simplement chez le marchand de champignons sur mon marché.

J'ai trouvé des shiitake frais sur le marché bio du Bd des Batignolles à Paris, mais pour celles et ceux que le bio intéresse, il y a des shiitake séchés, de la marque Cook dans les magasins Bio C'Bon. J'ai remplacé la crème fraîche par de la crème de soja et le fond de volaille par un demi cube de bouillon de légumes de la marque Rapunzel et qui est merveilleusement relevé en persil. Ce fût une explosion des papilles. Merci Bernard !!!

Si vous avez pas la flemme de vous y rendre sa vaut vraiment le coup de l'achat direct au producteur et d'évité notamment pour les champignons de paris des champignons sans gouts.
