  • Veillez bien à ce qu'il ne reste plus aucune arrête dans le dos de cabillaud. Placez les pavés de cabillaud dans un petit récipient, arrosez-les d'huile d'olive, parsemez de graines de carvi, salez avec le sel de citron vert puis ajoutez un peu de zeste de citron vert et de citron jaune. Mettez au frais le temps de cuire le riz pendant les 28 minutes nécessaires.
  • Pour la cuisson du riz : mettez de l'eau à bouillir dans une grande casserole avec des graines de can et du sel au citron vert
  • À ébullition, ajoutez le riz et laissez-le cuire selon les instructions (28 minutes ou alors 26 pour un riz un peu plus ferme).
  • Placez la crème dans une casserole, salez avec le sel de citron vert, ajoutez du poivre (à votre goût), des graines de carvi et du zeste de citron vert et de citron jaune.
  • Laissez réduire pendant une dizaine de minutes.
  • Mettez le beurre dans une poêle avec un peu d'huile d'olive sur feu assez fort. Placez les pavés de cabillaud et laissez-les cuire (et dorer) deux minutes de chaque côté.
  • Laissez réduire pendant une dizaine de minutes.
  • Servez le cabillaud en l'arrosant de crème onctueuse et parfumée et accompagnez-le de riz rouge très chaud !
