Pâtes "A La Carbonara"
Tout le monde connait les pâtes à la carbonara. La sauce charbonnière est souvent réalisée avec de la crème, alors que non, il n’y a pas de crème! Je vous propose la recette originale, avec de la pancetta, du pecorino, des pâtes sans oeufs au blé dur, des oeufs et du poivre noir. Rien de plus! Une recette rapide, simple et délicieuse.
Voici la pancetta et le vrai pecorino… On peut, si on ne trouve pas facilement ces ingrédients, remplacer par des lardons et du parmesan, comme on le voit d’ailleurs très souvent dans les recettes.
J’ai demandé à mon traiteur italien, de me couper la pancetta en tranches de 100g chacune. De cette façon, elles gardent un peu d’épaisseur. Couper la pancetta en morceaux (de la taille de lardons).
Faire revenir les morceaux de pancetta dans une poêle bien chaude.
Elle va commencer à dorer légèrement.
Quand la pancetta est cuite, enlever l’excédent de gras. Je passe simplement un papier absorbant dans le bas de la poêle pour récupérer la graisse.
Râper finement le pecorino.
Mettre l’oeuf et les jaunes dans un bol et fouetter à la fourchette.
Ajouter deux ou trois cuillerées à soupe de pecorino râpé.
Et bien mélanger.
Mettre les pâtes à cuire dans une grande quantité d’eau bouillante salée. Il suffit de les cuire « al dente », suivant le mode d’instruction du paquet utilisé.
Égoutter les pâtes en gardant 10cl d’eau de cuisson des pâtes.
Les remettre dans la casserole hors du feu, ajouter la pancetta.
Les oeufs battus. Ajouter au besoin une ou deux cuillerées à soupe d’eau de cuisson des pâtes.
Bien mélanger et servir immédiatement.
En saupoudrant de pecorino râpé et de poivre noir du moulin.
