Sablés crousti-fondants au beurre noisette

J’adore expérimenter les pâtes sablées et si vous regardez dans mon blog de cuisine, vous en trouverez beaucoup ! Ici, le fait de faire un beurre noisette, change complètement le goût et la texture du sablé. Avec une pointe de vanille et de sel, ils sont irrésistibles ! La texture se rapproche un peu de celle des montécaos que j’avais déjà posté. Ces sablés se conservent très longtemps sans aucun problème dans une boite hermétique.

  • Mettez le beurre dans une casserole sur feu modéré.
  • Portez-le à ébullition.
  • Et laissez-le prendre une belle couleur ambré. Versez-le alors dans un récipient.
  • Laissez reposer 20 minutes avant d’ajouter la vanille, le sucre, le sel et la farine.
  • Mélangez rapidement à la cuillère ou à la feuille de votre robot. Quand la pâte est homogène, c’est prêt !
  • Faites des boulettes de 20g que vous aplatirez légèrement. Mettez un peu de sel sur le dessus.
  • Faites cuire 20 minutes à 170°C.
  • Laissez tiédir complètement, puis conservez-les dans une boite hermétique.
