Croustillants Chocolat-Amandes

On dirait des florentins, mais ils sont plus croustillants et ne contiennent que des amandes effilées. De plus, une fine couche de chocolat vient souligner l’ensemble! Un petit gâteau (ou plutôt une friandise, car il n’y a pas d’oeuf, ni de farine!) qui sera parfait pour le thé ou le café.

  • Préchauffer le four à 180°C.Mettre le sucre, le miel, les beurres et la crème liquide dans une casserole. 
  • Mettre à chauffer sur feu modéré et laisser bouillir. 
  • On doit obtenir un caramel plutôt clair car il va ensuite recuire au four!
  • Ajouter les amandes effilées et bien mélanger. 
  • Mettre dans des moules en silicone. 
  • Bien tasser avec le dos d’une cuiller. 
  • Enfourner à 200°C et laisser cuire 5 à 8 minutes (c’est variable en fonction du caramel obtenu et de la puissance du four de chacun!). 
  • Démouler et laisser refroidir sur une grille. 
  • Tempérer la couverture choisie (voir la méthode ici). J’utilise la méthode au beurre de cacao mycryo, plus pratique quand on n’a pas de trempeuse ou de table en marbre!! 
  • Quand le chocolat est tempéré, verser une cuillerée à café dans l’empreinte à florentins. 
  • Puis poser un croustillant délicatement sur le chocolat pour qu’il s’étale juste sous sa surface. 
  • Laisser complètement cristalliser puis démouler!
  • C’est prêt, il ne reste plus qu’à sortir un jeu de cartes et du bon café!!
