Souris d'agneau aux fèves, miel et romarin

En ce moment de confinement, je vide mon congélateur. Il se trouve que j’avais des souris d’agneau en prévision d’une recette pour mon blog de cuisine. Et un paquet de fèves pelées de chez Picard (je ne suis pas sponsorisé !) trainait également nonchalamment. Du coup j’ai fait ce plat qui était tout à fait délicieux, surtout avec une bonne purée maison. Une viande moelleuse et des fèves qui cuisent dans le jus au miel, romarin et ail !

Instructions

Placez l’huile d’olive et le beurre dans une cocotte sur feu soutenu.
Posez les souris dans la cocotte et laissez-les se colorer de tous les côtés.
Faites fondre le beurre et le miel ensemble.
Puis badigeonnez bien la viande avec le mélange. Ajoutez les gousses d’ail entières et les feuilles des branches de romarin.
Salez, poivrez et versez 300ml d’eau.
Laissez cuire, couvercle fermé, pendant 2h30 sur feu doux.
Mettez ensuite dans un plat allant au four. Enfournez et laissez cuire à 150°C pendant 45 minutes. N’hésitez pas à arroser la viande avec le jus de temps en temps.
Quand le jus a bien diminué (Il doit en rester moins de 1cm en hauteur), versez les fèves dans le plat. Salez et poivrez les fèves et remuez pour les enrober de jus.
Laissez cuire 15-20 minutes de plus, puis servez immédiatement. Vous pouvez servir le tout avec une bonne purée maison ! On peut passer sous le grill du four 2 minutes
