Seguimos juntos para explorar las maravillas de la«Délice de la Casbah«, esta vez con los babuchas de almendra. Maravillosos puros pequeños hechos de masa quebrada, rellenos de mazapán, todo ello bañado en miel para una buena conservación y un sabor sin igual. Esta receta no presenta mayores dificultades. Para disfrutar con un té de menta.
Receta para una treintena de babuchas de almendra:
-1kg de polvo de almendra -500g de azúcar -5 huevos -2 cucharaditas de vainilla líquida
Pegar -500g de harina -200g de mantequilla -agua
-Miel líquida o ligeramente calentada -30 almendras enteras con piel
Comience por preparar la masa. Poner la mantequilla y la harina en el bol de una batidora con la «k», o simplemente en un bol grande si no se tiene.
Empezar a mezclar para lijar completamente. Hay que ir poco a poco para ver cómo se absorbe la harina.
Mezcla. La masa debe ser bastante suave pero no pegajosa.
Colocar la bola de masa en un lugar fresco y en film transparente durante 30 minutos si la mantequilla estaba fría, de lo contrario una hora.
Mezclar el polvo de almendra y el azúcar.
Mezclar en una mesa grande o en el bol de un robot de cocina tipo «kitchenaid». Cavar un pozo y añadir los huevos.
Añadir la vainilla líquida.
Empezar a mezclar los huevos con la vainilla.
A continuación, amasar la mezcla hasta formar una especie de mazapán.
Extienda la masa con un grosor bastante fino de 2 mm en una superficie de trabajo enharinada.
Cortar círculos con un cortador de 9 cm de diámetro.
Enrolle el mazapán en un rollo de 3 cm de diámetro y córtelo en trozos de unos 3 o 4 centímetros.
Hacer bolas grandes con los trozos y colocarlas en la base de los círculos de hojaldre.
Empieza a rodar tal y como se muestra en la foto.
Sujeta la masa en la esquina superior y baja el rizo, lo que creará un pequeño ángulo en la parte superior del círculo, como se muestra en la foto.
Enrolle en la superficie de trabajo con las manos hacia abajo en el rollo. Colocar las zapatillas en una bandeja de horno forrada con papel de hornear.
Con un pincel se aplica el huevo batido.
Empuje una almendra entera en la parte superior en el centro.
Hornear a 190°C durante 15 a 20 minutos, luego poner directamente en la miel y dejar que se empape durante 15 minutos.
Poner las zapatillas a escurrir.
Sírvelo con té de menta. Los «babuchas de almendra» pueden conservarse durante unos 10 días.
