El farz buen es una masa de panqueques ligeramente m\u00e1s gruesa que se cocina a la manera de los huevos revueltos, con mucho az\u00facar y mantequilla salada. El resultado son unos trocitos de masa irresistibles. En mi familia, esta receta la hac\u00eda a menudo Marie, una de las \u00faltimas mujeres con tocado en Breta\u00f1a (ya no quedan muchas). Cada mujer bretona tiene su propia manera de hacer el farz buen, e incluso se puede encontrar en forma de pastel m\u00e1s grueso. Marie lo hac\u00eda como lo presento aqu\u00ed, en trozos muy peque\u00f1os caramelizados.
