Y cuando digo \u00abel\u00bb, me refiero al que me gusta. Porque hay tantos Paris-Brest como cocineros que los preparan. He probado varias versiones y hasta ahora ninguna me ha gustado. As\u00ed que hice el sacrificio de probar muchos Paris-Brest para saber lo que quer\u00eda. Y entonces, \u00a1bingo! Entend\u00ed lo que quer\u00eda. S\u00f3lo faltaba componer la receta de mis sue\u00f1os. As\u00ed que lo hice todo como lo sent\u00ed (sin libro) y anot\u00e9 las proporciones que us\u00e9 sobre la marcha. As\u00ed que te doy la receta de mi rica y cremosa crema Paris-Brest sin demora.<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div style=\"text-align: justify;\"><b>La receta que os doy aqu\u00ed es s\u00f3lo un reflejo de lo que ten\u00eda en mente. Eres libre de cambiar lo que quieras. S\u00e9, por ejemplo, que esta receta no le gustar\u00e1 a mi padre (que, desde que se jubil\u00f3, hace muchos pasteles&#8230;) que preferir\u00e1 un chantilly con pralin\u00e9, montado justo antes de rellenar los redondeles de pasta choux. Mi versi\u00f3n es mucho m\u00e1s rica. En realidad es una crema mousseline (crema de mantequilla+custard) pero en proporciones que me gustan. Yo hago mi crema de mantequilla, es decir, con una crema pastelera suave (no la habitual) y sin merengue italiano. El resultado es una crema maravillosa que se mantiene perfectamente. Puedes divertirte haciendo los \u00abdise\u00f1os\u00bb que quieras con la manga pastelera. No se olvide de preparar los redondeles de pasta choux el d\u00eda anterior, para que puedan ponerse duros.
