Ten\u00eda un mont\u00f3n de ellos en mi mochila. Busqu\u00e9 y compar\u00e9 varias recetas antes de descubrir m\u00e1s tarde que su textura desmenuzable y casi escamosa (como otros petit fours secos) se deb\u00eda a una cierta cantidad de mantequilla (\u00a1s\u00ed, son ricos!) pero tambi\u00e9n y sobre todo a la forma de trabajar la masa. La forma m\u00e1s sencilla es preparar la masa en el bol de un robot de cocina Kitchenaid o Kenwood. Hay una raz\u00f3n para ello, los diamantes tendr\u00e1n esa ligereza, ser\u00e1n casi escamosos si la pasta se mezcla r\u00e1pidamente. Y la ventaja del robot es que esta operaci\u00f3n es muy r\u00e1pida.
