Pero los de esta receta&nbsp;forman parte del \u00abdim-sum\u00bb de la zona de Cant\u00f3n y&nbsp;Hong Kong. Son diferentes de los \u00absiu mai\u00bb de la zona de Shanghai que veremos m\u00e1s adelante (que tienen una forma diferente y un relleno que contiene arroz glutinoso). Tambi\u00e9n se encuentran en Vietnam, Filipinas e Indonesia.&nbsp;El \u00absiu mai\u00bb puede hacerse en infinidad de variaciones. Ofrezco dos cl\u00e1sicos, cerdo y gambas y cerdo y ternera. Para el siu mai en Guangzhou (Cant\u00f3n), lo mejor es utilizar pasta de won ton.
