Les dediqu\u00e9 un reportaje que pod\u00e9is leer <a href=\"http:\/\/www.bernardcuisine.com\/2012\/01\/mes-reportages-gastronomiques-les.html\">AQU\u00cd<\/a>, y fue mi primera receta publicada con la revista 180\u00b0C n\u00b01. En ese momento hab\u00eda hecho m\u00e1s de 35 intentos para elaborar el hojaldre y la crema. Realmente los estudi\u00e9 desde todos los \u00e1ngulos. He utilizado la misma receta de 180\u00b0C en mi primer libro \u00ables desserts de Bernard\u00bb. Pero hoy les ofrezco una versi\u00f3n ligeramente diferente. La masa sigue siendo la misma y no pruebe esta receta si no quiere hacerla usted mismo. Nunca conseguir\u00e1 el crujiente especial de un hojaldre cl\u00e1sico. Realmente tienes que hacerlo t\u00fa mismo, pero la buena noticia es que es muy f\u00e1cil de hacer.<br \/>\nLa diferencia est\u00e1 en la crema. Como sabe, en Lisboa hay muchos tipos de past\u00e9is, \u00a1no s\u00f3lo los de Bel\u00e9m! Mi receta m\u00e1s cercana a Bel\u00e9m est\u00e1 en mi libro. As\u00ed que aqu\u00ed os pongo otra versi\u00f3n que hice despu\u00e9s de hacerme con las pruebas para mi gusto. Nunca paro&#8230; Y \u00e9ste le dar\u00e1 unos past\u00e9is absolutamente divinos, sin el famoso ba\u00f1o de agua que utilizan en Bel\u00e9m y que describo en mi libro. Soy de Breta\u00f1a y para m\u00ed la mantequilla es un ingrediente esencial en la cocina. S\u00ed, pero no aqu\u00ed. Si se hace un hojaldre cl\u00e1sico (o mi versi\u00f3n en 2 vueltas simples) con mantequilla, ciertamente se obtendr\u00e1 un buen hojaldre, pero nunca el verdadero crujiente de los past\u00e9is. As\u00ed que no compre uno ya hecho. \u00a1Por piedad, mi raz\u00f3n (podr\u00eda volverme loco)! Utilizo una grasa de cocina para la masa.<br \/>\nDe vez en cuando doy un taller de past\u00e9is de nata y mis alumnos siempre ponen una cara rara al principio. Pero al final del curso y cuando escuchan el sonido de los past\u00e9is al romperse, se convencen al 100%. Pero, \u00bfqu\u00e9 grasa para cocinar? \u00bfMargarina? No. Seguramente los habr\u00e1s visto en el supermercado: son como bloques bastante duros de la marca Astra (o una marca equivalente) con un 70% de grasa. Debe sacarse de la nevera al menos dos horas antes de hacer la masa, de lo contrario estar\u00e1 demasiado dura. A temperatura ambiente se vuelve muy maleable y se puede hacer hojaldre sin dificultad. Es un verdadero placer hacerlo. Puede pensar que tendr\u00e1 un sabor extra\u00f1o: \u00a1extra\u00f1amente, no es as\u00ed! Nadie sospechar\u00eda de este inusual ingrediente. En cuanto a su composici\u00f3n, bueno, no es lo ideal, pero al mismo tiempo, tampoco se comen past\u00e9is todos los d\u00edas&#8230; Y el crujido es tan inimitable que vale la pena doblar la mantequilla. En una palabra, les pido que conf\u00eden en m\u00ed. Funciona a las mil maravillas y los past\u00e9is son perfectos.<br \/>\nUn \u00faltimo consejo: \u00a1tenga cuidado <b>de no utilizar<\/b> la grasa de cocci\u00f3n <b>\u00abantisalpicaduras<\/b> \u00ab! Una vez lo compr\u00e9 por error y no se extiende en el hojaldre sino que se rompe. No es necesario hacer past\u00e9is si no se hace el hojaldre de los past\u00e9is. Si amasa directamente con la m\u00e1quina, el agua se aglutinar\u00e1 alrededor del gancho y la masa no se formar\u00e1. Tendr\u00e1 que a\u00f1adir agua cuando en realidad no la necesita necesariamente.
