Esta vez, se trata de un foie gras deliberadamente marmolado y cocinado en una sart\u00e9n, sin horno, sin vapor, sin agua&#8230; Un m\u00e9todo sencillo que tiene la ventaja o el inconveniente (seg\u00fan lo que se busque) de perder un poco m\u00e1s de grasa de lo habitual, pero que sin embargo produce un excelente foie gras. Se puede elegir si se desvena o no. El interior debe estar a\u00fan casi crudo. Presionar bien las rodajas para eliminar la mayor cantidad de grasa posible. Cerrar la terrina y dejarla enfriar.
