Una velout\u00e9 rica, sedosa y perfectamente estacional. Se puede servir en peque\u00f1as cantidades para un aperitivo o en peque\u00f1os cuencos para un entrante explosivo. En cualquier caso, nada demasiado dif\u00edcil. Pero todav\u00eda tienes que hacer tu propio caldo. Para ello, se ponen dos litros de agua con las cebollas picadas, una carcasa de pollo (con piel) bien desgranada y comida en el proceso, una pastilla de caldo, zanahorias y apio picados. Sazonar con sal y pimienta. Es mejor empezar con un poco y luego a\u00f1adirlo gradualmente.
