En Italia, se trata m\u00e1s bien de un rag\u00fa de carne servido sobre pasta (normalmente tallarines, no espaguetis, o en lasa\u00f1a) con muchos ingredientes que se cuecen a fuego lento durante horas. Cuanto m\u00e1s se cocine, mejor ser\u00e1&#8230; El m\u00edo se horne\u00f3 durante casi 7 horas con un descanso nocturno. He estado en Bolonia dos veces en mi vida, pero en ese momento no ten\u00eda la idea de este blog. Pero all\u00ed todo el mundo tiene la mejor receta de la ciudad y cada cocinera tiene su peque\u00f1o secreto que la hace \u00fanica. Esta salsa no tiene necesariamente tantos tomates. Pero sobre todo otras cosas que a menudo se olvidan fuera de Bolonia, como el vino tinto, el apio, la panceta, las setas porcini tambi\u00e9n&#8230; Nada dif\u00edcil, lo que m\u00e1s tiempo requiere es la suave cocci\u00f3n que da a este plato todo su sabor.
