Hoy pongo la masa preparada de un poolish. \u00bfQu\u00e9 es? Se trata de un preparado pre-fermentado a base de agua y harina, en cantidades equivalentes con un poco de levadura. La masa se mezcla y se deja subir hasta alcanzar un estado muy l\u00edquido. Al d\u00eda siguiente, se hace la masa con este poolish y se a\u00f1ade la harina y el resto de ingredientes de la masa. El resultado es una masa deliciosamente crujiente e hinchada. La pasta es radicalmente diferente. Y significa que no tienes que usar una masa con levadura, que te lleva mucho tiempo en casa. Hay que hacer esta receta con los medios que se tienen a mano: los puristas dir\u00e1n que hay que utilizar otra harina (la roja o la azul), comprobar su \u00abw\u00bb&#8230; Aqu\u00ed hacemos pizzas caseras. Y el resultado es excelente.&nbsp;<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\nPara m\u00ed, es una elecci\u00f3n al azar: hice una pizza blanca con esta masa, pero obviamente se puede hacer una pizza con una salsa de tomate m\u00e1s cl\u00e1sica. Por el contrario, se puede hacer una pizza blanca con una masa sin poolish. S\u00f3lo quer\u00eda mostrarte dos m\u00e9todos diferentes que se adaptar\u00e1n a tu gusto.&nbsp;<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">\nQuiero dar las gracias a Audrey, que en su d\u00eda me hizo esta versi\u00f3n de pizza: copa, mozzarella y r\u00facula: una deliciosa mezcla de sabores que he vuelto a hacer en casa para el blog. Lo que estoy haciendo no es tradicional, \u00a1que quede claro! Enharino mucho la parte superior de la masa y la coloco en una bandeja para hornear.
