Especialmente cuando se hace con hojaldre caramelizado casero y una crema fresca, rica y cremosa. Puse las 1000 hojas de vainilla en mi primer libro, \u00abmes desserts\u00bb, que no he hecho desde que sali\u00f3. As\u00ed que ten\u00eda muchas ganas de hacer la versi\u00f3n con pralin\u00e9 para mi blog de cocina. \u00bfMi versi\u00f3n por qu\u00e9? Porque he desarrollado la crema para conseguir lo que ten\u00eda en mente y lo que me gusta. Hice varios intentos de hacerlo. Empiezo con un flan muy firme, enriquecido con mantequilla, que batir\u00e9 con pasta de pralin\u00e9 casera. Luego agrego una crema batida y mascarpone. De hecho, esta es la definici\u00f3n de crema diplom\u00e1tica: natillas&nbsp;+ nata montada. El resultado es incre\u00edblemente bueno: la crema es rica como debe ser, pero no demasiado dulce. Este postre s\u00f3lo merece la pena con hojaldre casero. As\u00ed que tendr\u00e1s que empezar el d\u00eda anterior. Lleva un poco de trabajo, pero las 1000 hojas son divinas.&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nUna verdadera instituci\u00f3n que Pierre Herm\u00e9 ha dado a conocer. Por supuesto, las 1000 hojas existen desde hace mucho tiempo, pero esta versi\u00f3n con pralin\u00e9 y una capa de pralin\u00e9 crujiente viene de \u00e9l. Esta receta es incre\u00edblemente deliciosa si haces la masa t\u00fa mismo. Hay que meterlo en la nevera durante al menos 1h30-2h00 para que la crema se endurezca. Habr\u00e1 que sujetarlo bien para cortarlo con una sierra. Me llev\u00e9 (\u00a1especialmente para mis clases!) un pr\u00e1ctico cortador de hojas.
