Como muchos, qued\u00e9 intrigado y luego subyugado por el m\u00e9todo de William Lamagn\u00e8re, pastelero de la Closerie des Lilas, cerca de Montparnasse. Me interes\u00f3 especialmente el utensilio utilizado para cortar las manzanas y lo busqu\u00e9 durante mucho tiempo. Mostr\u00e9 una captura de pantalla del v\u00eddeo en el que el Sr. Lamagn\u00e8re explica&nbsp; c\u00f3mo corta sus manzanas, a las tiendas de Jap\u00f3n, porque dijo que era una mandolina japonesa. El a\u00f1o pasado pas\u00e9 por los barrios de utensilios de cocina de Osaka y Tokio y los vendedores pensaron que estaba loco. Al fin y al cabo, este madol\u00edn \u00abjapon\u00e9s\u00bb se inspira en las mandolinas daikon, \u00a1pero no se vende por la fruta! De todos modos, \u00a1acab\u00e9 comprando un deudor de daikon!<br \/>\nLuego, finalmente, encontr\u00e9 la misma mandolina que utiliza nuestro chef, en un sitio web franc\u00e9s para descubrir que esta mandolina es efectivamente francesa, a pesar del nombre de mandolina japonesa. As\u00ed que tambi\u00e9n lo compr\u00e9.<br \/>\nEntonces KitchenAid sac\u00f3 el mismo accesorio que se adapta al robot de cocina y tuve la soluci\u00f3n. Ya os habl\u00e9 de ella en mi tarta espiral de manzana y chocolate (receta <a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2017\/11\/tarte-spirale-aux-pommes-et-creme.html\">AQU\u00cd<\/a>). As\u00ed que s\u00ed, para esta receta, necesitas este aparato&#8230; \u00a1Desde entonces he vendido el cortador de daikon, y he puesto la mandolina japonesa (pero comprada en Francia) en Breta\u00f1a en casa de mis padres!&nbsp;<\/div>\n<div style=\"text-align: justify;\">\nEl resultado me parece tan delicioso que no pod\u00eda dejar de publicar la receta aqu\u00ed. La hago en una clase de hojaldre y los alumnos siempre est\u00e1n encantados de descubrir la tarta cuando se desmolda. Las manzanas se caramelizan a la perfecci\u00f3n y se deshacen en la boca. No lo estoy preparando aqu\u00ed en seco. Ir en peque\u00f1as cantidades. Deje siempre que el az\u00facar se derrita por completo antes de a\u00f1adir m\u00e1s. Si te da miedo que el caramelo est\u00e9 seco, puedes empezar con un alm\u00edbar, pero en este caso te aconsejo que utilices un poco de jarabe de glucosa: aproximadamente 350g de az\u00facar y 50g de jarabe de glucosa con suficiente agua para empapar el az\u00facar.&nbsp;<\/div>\n<p><\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2018\/03\/IMG_8358-1024x682.jpg\" data-rel=\"penci-gallery-image-content\"  imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" data-original-height=\"1067\" data-original-width=\"1600\" height=\"266\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2018\/03\/IMG_8358-1024x682.jpg\" width=\"400\"><\/a><\/div>\n<p><\/p>\n<div style=\"text-align: justify;\">\nRetirar el interior de las vainas de vainilla.
