Con una base de streusel s\u00faper crujiente, un interior de pralin\u00e9 escurrido y crujiente y una suave crema de pralin\u00e9. Todo ello con un glaseado de roca, \u00a1estamos en pura decadencia!&nbsp;<\/div>\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div style=\"text-align: justify;\">\n<div style=\"text-align: left;\">\n<span style=\"\"><b>Para 8 pasteles.<\/b><\/span><br \/>\n<span style=\"\"><b>Pralin\u00e9 crujiente :<\/b><\/span><\/div>\n<div style=\"text-align: left;\">\n<\/div>\n<ul style=\"text-align: left;\">\n<li><b><span style=\"\">140g de pralin\u00e9 con 70% de frutos secos (ver receta <a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2010\/01\/praline-en-pate-ou-pralin-en-poudre.html\">AQU\u00cd<\/a>)<\/span><\/b><\/li>\n<li><b><span style=\"\">20 g de gavotas trituradas<\/span><\/b><\/li>\n<\/ul>\n<p><b style=\"text-align: left;\"><span style=\"\">Streusel de avellana :<\/span><\/b><\/p>\n<ul>\n<li><b style=\"text-align: left;\"><span style=\"\">50 g de mantequilla semisalada<\/span><\/b><\/li>\n<li><b style=\"text-align: left;\"><span style=\"\">50g de polvo de avellana tostada&nbsp;<\/span><\/b><\/li>\n<li><b style=\"text-align: left;\"><span style=\"\">50g de az\u00facar&nbsp;<\/span><\/b><\/li>\n<li><b style=\"text-align: left;\"><span style=\"\">50g de harina<\/span><\/b><\/li>\n<\/ul>\n<p><b style=\"text-align: left;\"><span style=\"\">Crema de pralin\u00e9 :&nbsp;<\/span><\/b><\/p>\n<ul style=\"text-align: left;\">\n<li><b><span style=\"\">250 ml de leche semidesnatada<\/span><\/b><\/li>\n<li><b><span style=\"\">50 g de mantequilla blanda<\/span><\/b><\/li>\n<li><b><span style=\"\">70g de az\u00facar<\/span><\/b><\/li>\n<li><b><span style=\"\">50 g de yema de huevo<\/span><\/b><\/li>\n<li><b><br \/>\n  <span style=\"\">30g de crema en polvo&nbsp;<\/span><br \/>\n<\/b><b><br \/>\n  <span style=\"\">&nbsp;(o almid\u00f3n de ma\u00edz)<\/span><br \/>\n<\/b><\/li>\n<li><b><span style=\"\">190 g de pasta de pralin\u00e9 (receta <a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2010\/01\/praline-en-pate-ou-pralin-en-poudre.html\">AQU\u00cd<\/a>)<\/span><\/b><\/li>\n<li><b><span style=\"\">90g de mantequilla blanda<\/span><\/b><\/li>\n<li><b><span style=\"\">1 hoja de gelatina<\/span><\/b><\/li>\n<\/ul>\n<p><span style=\"  font-family: inherit;\"><b>Esmalte de roca :<\/b><\/span><\/p>\n<ul>\n<li><b><span style=\"\">400 g de chocolate negro<\/span><\/b><\/li>\n<li><b><span style=\"\">120g de aceite neutro<\/span><\/b><\/li>\n<li><b><span style=\"\">120g de polvo de pralin\u00e9<\/span><\/b><\/li>\n<\/ul>\n<p>\nPrepara al menos 500g de pralin\u00e9 como se indica en mi receta <a href=\"https:\/\/stagingapp15670.cloudwayssites.com\/2010\/01\/praline-en-pate-ou-pralin-en-poudre.html\">AQU\u00cd<\/a>, pero con un 70% de frutos secos (mitad almendras y mitad avellanas) y un 30% de az\u00facar. Esto le da 175 g de avellanas, 175 g de almendras y 150 g de az\u00facar. Triturar el conjunto hasta convertirlo en un polvo grueso y tomar 120 g de este pralin\u00e9 para el glaseado de roca. Pero prefiero mucho m\u00e1s la versi\u00f3n sin chocolate, as\u00ed que s\u00f3lo hay que ver las bolas de pralin\u00e9 (la m\u00e1s clara en las 2 fotos de abajo). Para ello utilic\u00e9 los moldes \u00abtrufas 20\u00bb de Silikomart. Pero tambi\u00e9n puedes poner el pralin\u00e9 en un molde para cubitos de hielo.
