Por supuesto, hay muchas variaciones de este delicioso plato entre el norte, el centro y el sur de Vietnam. Hice docenas de preguntas a muchos vietnamitas sobre el mejor m\u00e9todo para obtener un ph\u1edf muy sabroso. As\u00ed que te doy la receta del caldo, y depende de ti agregar las hierbas y otras cosas que quieras! En cualquier caso, esta receta es perfecta: un plato completo y muy saludable. Un caldo especiado con carne fina y muy tierna en el que se a\u00f1aden hierbas arom\u00e1ticas y seg\u00fan la versi\u00f3n, nuoc m\u00e2m, salsa hoisin y unos brotes de jud\u00eda mungo. Perfecto para un plato equilibrado con amigos!!&nbsp;<\/div>\n<\/div>\n<p>Receta Ph\u1edf:<br \/>\n<strong><br \/>\nPara el caldo Ph\u1edf:<\/strong><strong><br \/>\n-2 cebollas grandes<\/strong><strong><br \/>\n-1 ra\u00edz de jengibre<\/strong><strong><br \/>\n-2kg de huesos de vacuno (rodilla u otros que contengan cart\u00edlago&#8230;)<\/strong><strong><br \/>\n-30g de az\u00facar (palma o s\u00e9mola)<\/strong><strong><br \/>\n-2 cucharadas de nuoc mam<\/strong><strong><br \/>\n-6 an\u00eds estrellado (an\u00eds estrellado)<\/strong><strong><br \/>\n-2-3 palitos de canela<\/strong><strong><br \/>\n-1 cucharada de semillas de cilantro<\/strong><strong><br \/>\n-5 vainas de cardamomo<\/strong><strong><br \/>\n-6 dientes<\/strong><strong><br \/>\n-4 a 5 litros de agua<\/strong><strong><br \/>\n-1 filete peque\u00f1o de ternera<\/strong><strong><br \/>\n-3-4 cebollines chinos<\/strong><strong><br \/>\n-1 manojo de albahaca tailandesa<\/strong><strong><br \/>\n-1 manojo de cilantro largo<\/strong><strong><br \/>\n-1 botella nuoc mam<\/strong><strong><br \/>\n-1 botella de salsa hoi-sin<\/strong><strong><br \/>\n-2 a 3 limas<\/strong><strong><br \/>\n-1 paquete de pasta de arroz<\/strong><strong><br \/>\n-1 o 2 pimientos rojos o verdes no muy picantes<\/strong><strong><br \/>\n-500 g de brotes de frijol mungo&nbsp;<br \/>\n<\/strong><br \/>\n<em><br \/>\nPonga la carne en el congelador durante al menos 3 horas antes de cortarla en rodajas finas. Depende de usted ver cu\u00e1ndo ser\u00e1 el m\u00e1s oportuno. Encontr\u00e9 mi jengibre un poco seco porque se cocin\u00f3 con la cebolla), as\u00ed que agregu\u00e9 una o dos rebanadas de jengibre fresco. La grasa en la superficie es la m\u00e9dula \u00f3sea. Quit\u00e9 un poco, pero a\u00fan dej\u00e9 un poco para el gusto. Busqu\u00e9 por todos lados mi lienzo de algod\u00f3n que no encontr\u00e9, as\u00ed que fui a la farmacia a comprar unas gasas para los ap\u00f3sitos. Lo m\u00e1s importante cuando compras nuoc m\u00e2m es el n\u00famero de la botella. Tambi\u00e9n hay cubos de caldo ya hechos&nbsp;ph\u1edf, puedes a\u00f1adir un cubo al l\u00edquido, pero no recomiendo sustituir un caldo casero por este cubo. Pero a\u00f1ade sabor a la&nbsp;ph\u1edf.<br \/>\n<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stagingapp15670.cloudwayssites.com\/wp-content\/uploads\/2014\/01\/pho-em-ingles-26-1024x682.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><br \/>\n<\/em><\/div>\n<p><em><br \/>\nAhora es necesario eliminar todos los elementos del caldo. No cometas el error de vaciar el contenido en un colador y ver que tu caldo se va al fondo del fregadero&#8230; Es lo contrario lo que se debe hacer. Digo eso porque casi lo hago (\u00a1un gesto que hacemos tan a menudo cuando cocinamos pasta!).&nbsp;<br \/>\n<\/em><br \/>\n<em><br \/>\nVemos aqu\u00ed que hay un poco de grasa (poco al final comparado con los 4 litros de caldo) en la superficie. Cortar la lima en trozos. La carne se cocina al instante y quedar\u00e1 muy tierna.&nbsp;<br \/>\n<\/em><\/p>\n<div style=\"text-align: justify;\"><em><br \/>\nLa otra opci\u00f3n es tener cerca una cazuela con agua hirviendo y sumergir la carne en ella durante 15 segundos antes de ponerla (bien escurrida) en los cuencos.
