El otoño es realmente mi estación favorita. Soy un amante de los frutos secos y he hecho tartas de frutos secos en el pasado, pero esta vez quería una tarta. ¿Y qué mejor manera de celebrar esta maravillosa estación que con una «tuorta da nusch», la famosa tarta de nueces de la Engadina, en los Alpes suizos? Delicioso para un aperitivo, no puedo resistirme a una buena rebanada durante mucho tiempo.
Receta para una tarta de 18 o 20 cm (dependiendo del grosor de la capa de frutos secos que se desee):
Pegar :
180 g de mantequilla semisalada
115g de azúcar
1 huevo
300 g de harina
Caramelo con nueces :
175g de azúcar
una buena pizca de sal
50g de jarabe de glucosa
20 cl de nata doble
30g de miel
300g de nueces
Preparar la masa. Poner la mantequilla y el azúcar en un bol.
Mezclar hasta obtener una especie de crema. Añadir el huevo y mezclar de nuevo.
Verter la harina y mezclar hasta que la masa sea homogénea. No mezcle demasiado, deje de hacerlo cuando la masa se agrupe.
Dividir la masa en dos trozos, uno más pequeño que el otro. Envolver en film transparente y enfriar.
Mientras tanto, vierta el azúcar, el jarabe de glucosa, la sal y el agua suficiente para empapar el azúcar.
Llevar a ebullición.
El azúcar se irá coloreando poco a poco. Puede mezclar sin preocuparse porque el jarabe de glucosa evita que el azúcar se cristalice.
Cuando el caramelo esté ámbar, añadir la nata doble calentada. Tenga cuidado con el vapor muy caliente.
Mezclar bien y calentar a 114°C.
Cuando se alcance esta temperatura, vierta los 30 g de miel. Mezclar y apagar el fuego.
Picar las nueces de forma gruesa.
Verter en el caramelo (apagar el fuego).
Vierta esta deliciosa mezcla en un recipiente.
Cuando la masa esté fría, extiéndala con un rodillo sobre una superficie de trabajo enharinada. Coloque la masa más grande en su molde o círculo (previamente engrasado). Asegúrese de que tiene un buen ángulo recto con la parte inferior del círculo o molde. Si utiliza un círculo, colóquelo en una bandeja de horno forrada con papel de hornear o con un tapete para hornear.
Verter todo el caramelo de nueces.
Cubrir con la masa más pequeña.
Cortar la masa al tamaño del molde.
Sellar la masa con un tenedor alrededor. De lo contrario, el caramelo se saldrá.
Pinche también la masa.
Hornear durante 50 minutos a 175°C. La parte superior debe estar dorada.
Cortar el pastel de nueces. Para cortarlo perfectamente, lo dejo enfriar completamente, pero lo como a temperatura ambiente. ¡El caramelo tendrá la consistencia ideal!
