En mi último informe os hablé de mi colaboración con la marca Silikomart. Como ya he dicho, este verano fui a un curso de formación de dos días en Venecia para utilizar los moldes y hacer muchos pasteles con la chef Giulia Gozzelino. Volví con un montón de recetas e ideas y ¡aquí está la primera! La idea es congelar el pastel y luego desmoldarlo para que mantenga la forma. Aquí se trata de una crema de limón, con una inserción de lima y merengue crujiente sobre un crujiente shortbread. Muchas gracias a Silvia y Giula por esta receta.
Ingredientes para 12 limones:
Pegar :
120 g de mantequilla
75 g de azúcar glas
25g de polvo de almendra
200 g de harina T55
1 huevo
Inserción de cal :
150 g de zumo de lima
60g de azúcar
2g de agar agar (una cucharadita muy pequeña)
la cáscara de una lima
Merengue :
50 g de clara de huevo
50g de azúcar
50 g de azúcar glas
la cáscara de una lima
100 g de chocolate blanco para protegerlos (véase más abajo)
Crema de limón :
200g zumo de limón
200g de azúcar
6 yemas de huevo
6g de gelatina
375g de mantequilla blanda (err… ¡sí, sí!)
ralladura de 4 limones
Un frasco de spray efecto terciopelo amarillo Silikomart
Esta receta es más fácil de manejar en dos días. El primer día puedes hacer el shortbread, los merengues y el inserto. Al día siguiente se termina con la crema, la congelación final y la decoración.
Preparar la masa dulce. Poner todos los ingredientes, excepto el huevo, en un bol o en el bol de un robot de cocina.
Batir con la hoja del robot de cocina (esta es la K) hasta que se incorpore la mantequilla.
En este punto, añadir los 50g de huevo (¡aproximadamente un huevo mediano!).
Vuelve a encenderlo sólo para incorporar el huevo batido, ¡pero no más!
Extienda la masa a tres milímetros sobre papel sulfurizado y colóquela en un lugar fresco.
Si tiene un cortador de galletas en forma de diamante, utilice uno que sea más grande que el molde de limón.
Corta 12 trozos de masa y colócalos sobre un trozo de papel sulfurizado, o mejor aún, sobre una esterilla que evite que la masa se hinche.
Hornee a 170°C durante unos 15 minutos, sin dejar de vigilar. El shortbread debe estar dorado. Reservar en una caja hermética cuando se hayan enfriado.
Preparar el merengue batiendo las claras de huevo con el azúcar en polvo. Las claras deben estar a temperatura ambiente.
Añadir el azúcar glas y mezclar con una espátula como para una mousse de chocolate.
Añade la ralladura de lima.
Utilice una manga pastelera para hacer líneas ligeramente más pequeñas que el tamaño del molde de limón. Haz más que suficiente en caso de que rompas alguno más tarde.
A continuación, hornear a 80°C durante 2 horas. Compruebe los merengues, deben estar perfectamente secos.
No es el merengue correcto en la foto, pero es el mismo. Píntalos con chocolate blanco derretido para protegerlos cuando los pongas en la crema de limón. Reservar hasta que se necesite.
A continuación, prepare el inserto de cal. Mezclar el azúcar y el agar-agar.
Verter el zumo de lima y mezclar bien. Calentar a fuego lento en una cacerola pequeña.
Añade la ralladura de lima.
Llevar a ebullición y contar 10 segundos. Vierte en moldes más pequeños que los de limón o en moldes de cubitos de hielo. Aquí estaba en Silikomart, así que teníamos todos los moldes disponibles, pero los cubitos de hielo servirán perfectamente. Pero otra opción es utilizar los propios moldes de limón vertiendo en 12 cavidades. Si se sacan de los moldes congelados, se pueden volver a utilizar en la crema de limón (ver más abajo).
Poner el plato en el congelador. Unas horas más tarde, será perfecto. Guárdelos en el congelador.
Para la crema de limón, vierta el azúcar, el zumo de limón y la ralladura en un cazo. Añadir las yemas y mezclar bien.
En una caldera doble, calentar la mezcla sin dejar de remover hasta 85°C.
Añadir la gelatina escurrida y mezclar bien.
Dejar enfriar a 40°C y añadir la mantequilla cortada en trozos.
Verter la crema en los moldes hasta 3/4 de su altura.
Añadir el inserto de lima y el merengue protegido por el chocolate blanco.
Terminar con la crema de limón por encima y congelar durante al menos 4-5 horas.
Sacar con cuidado y colocar los limones en una rejilla para hornear.
Pulverizar con spray perlado de efecto terciopelo amarillo. en toda la superficie de los limones. Sólo hay que agitar bien el frasco y proteger la superficie de trabajo a su alrededor.
Colocar con cuidado los limones sobre el shortbread (con el lado aireado hacia arriba).
Dejar que se descongele completamente en la nevera. Como hice las fotos en Venecia, en Silkomart, no tuvimos tiempo de descongelar y se puede ver a continuación: el inserto sigue congelado. Tómate el tiempo necesario en casa para hacerlo bien. ☺
