Me encanta hacer pasteles para Navidad. El olor de estos productos al hornearse llena toda la casa de una fragancia reconfortante. Os ofrezco mi versión del Stollen, este pastel alemán entre pan y brioche, relleno de frutos secos empapados en alcohol. Aquí se rellena con mazapán y se cubre con azúcar de canela y un poco de azúcar glas para decorar.
Para 2 stollens:
Dejar macerar el día anterior
125 g de pasas rubias
125 g de pasas sultanas
25 g de piel de naranja confitada
25 g de piel de limón confitada
ron ámbar
Para la masa:
480g de harina
8 g de levadura seca o 15 g de levadura fresca
60g de azúcar
170 g de leche semidesnatada
180 g de mantequilla semisalada
1 buena pizca de cardamomo en polvo
1 buena pizca de canela molida
50 g de almendras enteras, peladas
25g de almendras fileteadas
la cáscara de un limón sin tratar
365 g de mazapán (a dividir en dos)
Finalmente:
200g de azúcar (¡no se utiliza todo!)
20 g de canela en polvo
50 g de mantequilla derretida
un poco de azúcar glas
Poner las uvas, la piel de limón confitada y la piel de naranja confitada en un recipiente.
Verter el ron y dejar que se hinche durante la noche.
Al día siguiente, gran parte del ron había sido absorbido.
Tostar las almendras enteras en el horno durante 15 minutos a 170°C.
Píquelos gruesos con un cuchillo.
Vierta la harina, la leche, la levadura, el azúcar y las especias en el bol de su robot de cocina o en un bol.
Añadir también la mantequilla derretida y amasar durante 5-7 minutos.
Debería tener una pasta homogénea.
Añadir las uvas escurridas y la piel cortada en trozos pequeños.
No olvides las almendras picadas y las almendras fileteadas.
Y la cáscara del limón sin tratar.
Amasar de nuevo y dejar crecer durante 2 horas en un lugar cálido.
La masa no subirá mucho, pero lo suficiente.
Tome un trozo de 170 g de mazapán y la mitad de la masa.
Enrollar la pasta de almendras en forma de salchicha.
Extender la masa de manera que sea ligeramente más larga que la salchicha.
Colocar la salchicha encima de la masa y doblarla. Enrolla un poco.
Dar la vuelta y colocar en una bandeja de horno forrada con papel de hornear.
Haga lo mismo con el segundo stollen.
Hornear a 170°C durante 40 minutos.
Mezclar el azúcar en polvo con la canela.
Unte la superficie con mantequilla derretida antes de añadir el azúcar con canela.
Poner una buena capa de azúcar. Esto se pegará a la mantequilla derretida y podrás retirar el exceso después. Dejar reposar hasta que esté a temperatura ambiente. En este punto puedes retirar el exceso de azúcar y espolvorear con azúcar glas sólo para decorar.
