Panes blandos para perritos calientes, método Yudane
El yudano es un pequeño milagro. Para conseguir bollos, panecillos y panes de leche mágicamente suaves, el yudane y el tangzhong son soluciones bastante alucinantes. Empiezo con el yudane, para los bollos de los perritos calientes. También se pueden hacer panes de hamburguesa redondos. La textura resultante es fantástica y supone un cambio radical respecto a una masa elaborada sin la yudana. ¿Qué es la yudana? Es una parte de la harina que se mezcla con agua hirviendo. Esta masa blanda y plástica se añade entonces a la masa, que se vuelve increíble. ¿Por qué? Esto se debe a que el yudan retiene el agua y hace que el almidón de la harina se gelatinice. Hay que intentar creerlo.
