Durante mi estancia en Andalucía (ver el viaje culinario haciendo clic AQUÍ), tuve la oportunidad de visitar Arcos de la Frontera poco antes de la Semana Santa. Es entonces cuando se prepara este típico pastel de la ciudad. Si hubiera llegado antes o en otra época del año, ¡nunca habría experimentado un pastel tan original! La forma me dio la impresión de que iba a comer una especie de pan de molde , pero el delicioso sabor del anís, el azúcar y el aceite de oliva no fue suficiente. ¡Había visto la composición en el envase artesanal y por eso me puse a trabajar en casa para reproducir la receta para ustedes! La masa es un placer para trabajar y se puede hacer en pocos minutos. Además, estos pasteles son deliciosos con el té y se pueden conservar durante mucho tiempo en una caja adecuada .
Receta de 9 pasteles de Arcos de la Frontera:
-420g de harina -10g de azúcar -20g de anís -15g de semillas de sésamo tostadas -5g de canela -1 paquete de levadura de panadería (tipo Francine) o 20 g de levadura fresca -150g de aceite de oliva -unas treinta almendras peladas -azúcar en polvo
Colocar la harina, el azúcar, las semillas de sésamo y el anís en un procesador de alimentos o en un bol grande.
Remover, añadir canela en polvo.
Añadir el aceite de oliva.
Diluir la levadura fresca o seca en un poco de agua tibia.
Mezclar y añadir el agua necesaria para hacer una masa manejable .
Dejar reposar durante 1 hora en un lugar cálido.
Poner el azúcar en la superficie de trabajo.
Pasar la masa por el azúcar y trabajarla un poco para incorporar el azúcar.
Dividir la masa en 9 trozos. Enrollar cada trozo de masa en forma de salchicha en el azúcar.
Cuando se forme la salchicha, asegúrese de que el azúcar la envuelve.
Enrollar la salchicha sobre sí misma y cerrar presionando la masa en los extremos unidos.
Poner 3 almendras por pastel, presionándolas en la masa. ¡Una almendra debe cerrar la junta!
Hornear a 190°C durante unos 15 minutos, sin perder de vista. Todo depende del horno que se utilice.
Dejar enfriar y guardar en una caja hermética. Como no llevan huevo ni mantequilla, ¡se pueden conservar durante mucho tiempo!
