He aquí una bonita receta a medio camino entre el lemon curd y la crema de tiramisú. Esta receta es de una compañera de trabajo, Elizabeth. He hecho algunos cambios en la receta original, pero os pongo las dos recetas. Muchas gracias a Elizabeth. ¿Y por qué no terminar una comida con una nube suave pero incisiva?
Receta de mousse de limón para 4-5 personas:
-2 limas -1 huevo entero + 1 yema -3 claras de huevo (para batir) -2 hojas de gelatina -100g de azúcar en polvo -250 g de mascarpone -25g de azúcar glas -30g de mantequilla blanda
Receta de Elizabeth (ver proceso anterior) -2 limas -4 huevos -4 hojas de gelatina -250 g de mascarpone -100g de azúcar
Para la receta de Elizabeth, basta con mezclar las yemas con el azúcar y blanquear. A continuación, calentar el zumo de limón y añadir las hojas de gelatina remojadas. El zumo de limón se añade a la mezcla de yemas y azúcar. Añadir el mascarpone y las claras de huevo.
Para mi versión: Exprime el zumo de dos limas. Poner en remojo las hojas de gelatina.
Poner el zumo en un cazo con un huevo entero + una yema (¡en la foto sólo hay una yema, pero son dos!) y el azúcar glas.
Cocer a fuego lento, batiendo continuamente, hasta 85°C.
Añadir las hojas de gelatina empapadas y escurridas.
Mezclar bien y añadir la mantequilla blanda.
Deje que se enfríe por completo. Añade la cáscara de dos limas.
Añadir el mascarpone y batir durante 5 minutos.
Batir las claras a punto de nieve e incorporar el azúcar glas.
Añadir las claras de huevo a la mezcla de mascarpone, levantando bien para que la mezcla no se deshaga.
Colóquelo en moldes o cuencos y enfríelo durante al menos 3 horas antes de servirlo. Servir con pan de molde en forma de diamante (por ejemplo).
