Es mayo y hace frío, llueve (al menos en París) y está muy feo. Hace falta mucho valor para salir del edredón por la mañana… Me apetecía un poco de comodidad y me regalé estas pequeñas galletas a medio hacer con un centro de caramelo líquido. Hice varios intentos para que el caramelo quedara bien encerrado en el hojaldre sin interferir demasiado en su cocción. Por cierto, para que salga perfecto, lo preparo todo el día anterior: el caramelo y la masa del pastel. ¡Hazlo una y otra vez para alegrar el día!
Receta de 5 mi-cuits de chocolate con centro de caramelo salado:
Toffee:
75g de azúcar
40g de jarabe de glucosa
1/2 cucharadita de sal
15g de agua
50 g de nata líquida
Chocolate a medias:
115 g de mantequilla salada
100 g de chocolate negro
2 huevos + 2 yemas
75 g de azúcar glas
50g de harina
Puedes (y debes) preparar todo el día anterior. Para el caramelo, vierta el jarabe de glucosa en un cazo. Puede que tengas demasiado caramelo, pero no creo que eso sea un problema para ti. ????
Añadir el azúcar y la sal.
Verter el agua y llevar a ebullición.
Tenga cuidado de no quemar demasiado el caramelo. Debe ser de color ámbar.
Cuando tenga un buen color, verter toda la crema fuera del fuego.
Mezclar bien y dejar enfriar a temperatura ambiente.
También se puede hacer la masa el día anterior. Derretir la mantequilla y el chocolate juntos.
Mezclar los huevos, las yemas y el azúcar glas en un bol aparte.
Batir para disolver el azúcar, pero no trabajar demasiado.
Verter el chocolate/mantequilla derretida y mezclar bien.
Terminar con la harina. A continuación, enfríe la masa durante la noche y coloque el caramelo en el congelador.
Al día siguiente, engrase sus moldes (moldes de aluminio). Yo utilizo el deslizador de canelés, pero un spray desmoldante servirá. Poner la masa fría en una manga pastelera con una boquilla ancha (15 o 20 mm). Poner una parte de la masa en el fondo.
El caramelo se ha endurecido (por supuesto está congelado). Con una cuchara, sacar una cantidad generosa de caramelo.
Colocar esta bola de masa congelada en el centro de la masa fría.
Cubrir con el resto de la masa en los 5 moldes.
Hornear a 190°C durante 17 minutos. La parte superior debería empezar a cuajar ligeramente.
Puedes esperar 5 minutos antes de volcarlo en un plato y ver con asombro cómo el caramelo sale del pastel…
