Aquí están los macarrones de chocolate blanco y frambuesa, con un toque de geranio para los que lo deseen. ¡Una receta que hice un poco al azar! Pero los que lo probaron querían la receta, ¡así que os la doy! Macarrones frescos y fragantes con una cáscara crujiente y un interior terriblemente suave.
Receta de los macarrones «Les Reines»:
-Una receta de macarrones básicos + colorante rosa o de grosella roja (¡un poco!) Ganache de frambuesa, rosa y chocolate blanco: -220g de cubierta de marfil de Valrhona -220 g de frambuesas frescas o congeladas -40g de manteca de cacao -3 pizcas de cristales de aceite esencial de geranio -40g de azúcar invertido (o miel blanca cremosa) -40g de nata para montar -2 hojas de gelatina
Hacer los macarrones (receta aquí) con un ligero toque de polvo colorante rojo, para obtener macarrones rosas.
Hornear durante 15-16 minutos a 140°C.
Poner en un cazo las frambuesas (frescas o congeladas), la manteca de cacao, el azúcar invertido (o la miel blanca cremosa).
Cocinar hasta que hierva.
Añadir la gelatina remojada y exprimida.
Vierta el líquido hirviendo, sin filtrar (las semillas se quedan dentro), sobre la tapa de color marfil.
Añade la nata.
Dejar en el frigorífico hasta que se espese, y luego rellenar las cáscaras de los macarrones de dos en dos.
Déjalo en la nevera durante 24 horas antes de comerlo.
