Gracias a Brigitte Riou, una amiga de mi madre, que obtuvo la receta de su abuela. Una receta perfecta para la lengua de gato. Una galleta fina, ligera y muy crujiente con un buen sabor a mantequilla. Todo el mundo conoce este buen pastel y me sorprendió descubrir la mejor receta de lengua de gato gracias a Brigitte. Así que un gran agradecimiento.
Receta para las lenguas de gato:
-135g de claras de huevo -100g de harina -125g de azúcar -2 paquetes de azúcar de vainilla -125g de mantequilla
Precalentar el horno a 180°C. Derretir la mantequilla.
Mezclar el azúcar y el azúcar de vainilla.
Mezclar la mantequilla y el azúcar hasta formar una crema.
Añadir la harina y mezclar bien.
Batir las claras a punto de nieve y añadirlas a la mezcla anterior, levantándolas bien para que no se bajen.
¡La masa está lista!
Yo prefiero usar una manga pastelera para asegurarme de obtener unas lenguas de gato más consistentes. Con una punta nº 9, dibujar líneas de pastelería de 6 cm de largo. El espacio es importante ya que las lenguas se extienden.
Hornear a 180°C durante 10-13 minutos. Vigilar las lenguas para que se doren.
¡Dejar enfriar sobre una rejilla y poner en una lata hermética !
