Como viajo mucho menos que antes, miro mis cuadernos en los que apunto los platos que he probado en el extranjero. Este plato de langostinos crujientes al wasabi se me quedó grabado y lo había probado en Shanghái hace algún tiempo. Me tomó mucho tiempo dar con las proporciones adecuadas y desde que por fin descubrí la manera de hacer los fritos extra crocantes, me divierto haciendo las delicias que tenía en mente. Se hace con este plato que es muy especial. Recomiendo que si lo pruebas, tal vez solo comiences con la mitad de las proporciones. La “salsa” que recubre las gambas es muy, muy especial. ¡Pero una delicia cuando te animas a aventurarte allí!
