Una nueva tarta de fresas con una nueva técnica de pastelería. Había visto una tarta similar en casa de Yann Couvreur, pero no tuve tiempo de probarla. Se me ocurrió hacer mi propia versión con una crema de albahaca y una crema de almendras al limón y el resultado superó mis expectativas. Sobre todo con las fresas de temporada, ¡que están sublimes en este momento! Para la técnica, se utiliza una tela aireada para el fondo y el lateral del círculo, que evita que la masa se hinche. Esto significa que se puede hornear sin guisantes o sin la técnica del saco de harina. Esto también da a la tarta un bonito patrón.
