Para las tiras de calabacín marinadas :

  • Empieza lavando los calabacines y cortando los extremos. Córtalas por la mitad a lo largo.
  • Colócalo en una fuente apta para el horno. Añade la cabeza de ajos entera. Rocía generosamente con aceite y sazona con sal y pimienta.
  • Cocer en el horno a 220°C (ventilado) durante 1 hora y 10 minutos.
  • Deja enfriar, pesa los calabacines cocidos y ponlos, junto con el jugo que hayan soltado, en una batidora pequeña con los dientes de ajo asados.
  • Pesar el 10% del peso de los calabacines en tahini y crema de sésamo. Sazona con sal y pimienta, un poco de aceite de oliva (1 cucharada sopera) y las hojas de unas diez ramitas de menta.
  • Será mucho, ¡pero será fresco y delicioso!
  • Mezcla hasta obtener una crema homogénea no demasiado lisa.
  • Para el último calabacín, córtalo longitudinalmente en tiras finas, mejor con una mandolina.
  • Viértelo en un cuenco y añade la ralladura de la mitad de una lima entera. Sazona con sal y aceite de oliva.
  • Deja marinar en el frigorífico durante al menos una hora. Puedes ponerlo todo en film transparente en un lugar fresco.
  • Justo antes de servir, pon el caviar de calabacín en una fuente, añade las rodajas de calabacín marinadas y rocía con aceite de oliva. Para un aceite de clorofila con sabor a menta, ¡ve AQUÍ!
  • Sírvelo con pan crujiente caliente.

¡Esta receta la hice un poco así, con verduras del mercado y resultó deliciosa y muy apreciada por mis invitados! La lima da una impresión de frescura y las verduras están cocinadas en su punto. El delicioso pesto casero con cilantro, cacahuetes, espinacas y lima le da un toque muy original. ¡No dudes en poner las verduras que más te gusten!
