Acabo de regresar de una maravillosa semana en Córcega y, aunque fui cuando tenía 3 años, tenía un recuerdo muy vivo de los olores de la isla. He aquí una primera receta, la de los canistrelli de almendra. Compré muchos de ellos sobre la marcha y analicé los envases de los que más me gustaban. Así que hice lo que siempre hago, fui a mi taller a hacer algunas pruebas. El resultado es perfecto. Crujiente sin ser duro. Con vainilla y vino blanco seco. La receta está lista en 5 minutos (bueno, ¡todavía queda la cocción!) y es apta para veganos.
Receta para 400 g de canistrelli de almendra
200g de harina
3g de polvo de hornear
1 bolsa de azúcar de vainilla de 10 g
85g de azúcar
2 buenas pizcas de sal
70 g de aceite de colza neutro
55g de vino blanco seco
40g de almendras
Coloque la harina, la levadura en polvo, el azúcar de vainilla, el azúcar y la sal en el bol de su procesador de alimentos o en un bol.
Mezclar y luego verter el aceite.
Mezclar con la hoja o con la punta de los dedos para obtener una especie de arena.
Verter el vino blanco seco (que se puede sustituir por agua), remover para formar una pasta y añadir las almendras. ¡Una última mezcla y ya está!
Dividir la masa en dos bolas.
Formar cada bola en una salchicha larga, de unos 30 cm de largo.
Hornear durante 30 minutos a 170°C. Dejar enfriar durante 20 minutos y luego cortar en rodajas de aproximadamente 1 cm de ancho.
Vuelva a meter en el horno, siempre a 170°C, esta vez durante unos 20 minutos.
Sólo hay que comerlos o guardarlos en una caja hermética.
