Hacía mucho tiempo que no publicaba una receta de chocolate. Os presento esta nueva versión con un suave praliné de lima-limón. Un chocolate crujiente para un interior fundente y explosivo gracias a la cáscara de lima. Parece que cada vez sois más los que hacéis vuestros propios chocolates «caseros» con el método de la manteca de cacao mycryo. ¡Todo lo que tienes que hacer es comprar una variedad de moldes de policarbonato para más el placer de tus invitados o tu familia!
Receta de los bombones de praliné: (para unos 60 bombones)
-400 a 500g de cobertura templada (leche o negra) (receta AQUÍ)
160 g de praliné Barry (también puede utilizar 250 g de praliné casero si lo desea)
-40g de mantequilla
-40g cubierta negra
-la cáscara de 6 limas sin tratar, si es posible
En primer lugar, aconsejo a todos que lean la receta de chocolate atemperado ¡¡!!
Atemperar el revestimiento negro o lechoso y luego rellenar los moldes de policarbonato con la forma elegida. Raspar bien con un cuchillo para chocolate o una hoja plana grande.
Tienes que preparar los mejillones de la misma manera que los caracoles con praliné, ¡haciendo click AQUÍ!
Derretir la mantequilla con el chocolate al baño María o en el microondas.
Añadir el praliné. Puedes usar sólo praliné «casero» o mitad «casero» y mitad praliné Barry (desde que lo conozco, ¡lo uso en todas partes!).
Mezclar bien y luego añadir la cáscara de todas las limas sin tratar. Yo utilicé la cáscara de 6 limones, pero puedes utilizar 4, probarlos y luego añadirlos uno a uno hasta conseguir el sabor deseado.
Mezclar bien y colocar el praliné en una manga pastelera provista de una boquilla de 8 mm. Rellenar las cavidades con chocolate templado y praliné de lima. Poner en la nevera hasta que el praliné se endurezca un poco. A continuación, cierre con chocolate atemperado.
Alisar perfectamente y raspar el molde.
Déjelo durante una o dos horas a temperatura ambiente y luego invierta el molde. Recoge los chocolates con guantes de látex para no dejar marcas en las golosinas.
