\nVoil\u00e0 l’un de mes voyages culinaires que je pr\u00e9f\u00e8re, celui de P\u00e9kin! Il y a tellement de choses \u00e0 d\u00e9couvrir, allant du pire au meilleur, cette ville est tellement riche culturellement et d’un point de vue gastronomique qu’il est impossible d’en faire le tour enti\u00e8rement sur un site… Au programme de notre voyage culinaire, des march\u00e9s de rues, des vendeurs ambulants, des restaurants hors du temps et le d\u00e9licieux canard laqu\u00e9. <\/div>

\n<i>Voici donc enfin apr\u00e8s les bonds qu’ont fait nos estomacs avec les march\u00e9s pr\u00e9c\u00e9dents, le c\u00e9l\u00e8bre canard laqu\u00e9! J’ai essay\u00e9 plusieurs endroits \u00e0 P\u00e9kin et c’est toujours avec un grand plaisir gustatif que j’en d\u00e9couvre de nouveaux! Le canard laqu\u00e9 n\u00e9cessite entre 24 et 48 heures de pr\u00e9paration avant de le manger. On doit d’abord soulever la peau du canard en pratiquant une incision au niveau du croupion puis en soufflant. Le canard est ensuite enduit d’une marinade compos\u00e9e de miel et de sauce de soja. On le laisse ensuite s\u00e9cher \u00e0 l’air libre pendant une ou deux journ\u00e9es avant de le cuire dans un four au feu de bois. <\/i><\/div>

\n<i>Le canard est ensuite d\u00e9coup\u00e9 devant le client par un expert! Avec des petits gestes pr\u00e9cis et un bon couteau, le chef pr\u00e9l\u00e8ve la peau du canard. Il est bon de rappeler que l’on servait autrefois uniquement la peau du canard sans accompagnement , mais que pour accommoder aux go\u00fbts des occidentaux, au d\u00e9but du 20\u00e8me si\u00e8cle, il a ensuite \u00e9t\u00e9 servi avec des cr\u00eapes de riz et une sauce (hoisin) et beaucoup plus de chair. <\/i><\/div>
