The “Amaretti” are Italian cookies. There are as many as there are Italian stoves. The principle is a kind of “macaroon” with sweet and bitter almonds, sometimes with apricot kernels. They can be crunchy or soft. Amaretto (amaretti in plural) is the diminutive of bitter (amaro). I propose a simple, fast and delicious recipe which brings the crunch of the cake, then which reveals then a very tender heart with the good taste of bitter almonds. Recipe for “amaretti” for about fifty:<\/div>\n

-280g blanched almonds<\/strong><\/div>\n

-230g of sugar<\/strong><\/div>\n-1+1\/2 teaspoon bitter almond extract<\/strong><\/div>\n-4 egg whites<\/strong><\/div>\n <\/div>\n
Start by preheating the oven to 190\u00b0C.<\/em><\/div>\nMix together the almonds and sugar. <\/em><\/div>\n
