So today, the shrimp ravioli. I had already practiced before leaving for the particular folding of these &#8220;Har gow&#8221; but once&nbsp;in Shanghai I was surprised by the variety of these foldings and that finally it was quite easy. The trick is to have it explained to you. It&#8217;s true that with this particular course, I had the time to understand well and to repeat myself as many times as necessary until I passed!<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">&nbsp;<\/div>\n<p><a name=\"more\"><\/a><\/p>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">&nbsp;<\/div>\n<div style=\"clear: both; text-align: left;\">\n<p>All the ingredients can be found in Asian grocery stores, especially the wheat starch.<\/p>\n<\/div>\n<h2 style=\"clear: both; text-align: justify;\">Recipe for shrimp riavolis (36 pieces):<\/h2>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">&nbsp;<\/div>\n<div style=\"clear: both; text-align: justify;\">&nbsp;<\/div>\n<div style=\"clear: both; text-align: justify;\"><strong>For the dough:<\/strong><\/div>\n<div style=\"clear: both; text-align: justify;\"><strong>&nbsp;  -180g of wheat starch<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  -30g of potato starch<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  boiling water (more or less&nbsp;three ladles)  <\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  three &nbsp;tablespoons of oil<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\">&nbsp;<\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>For the stuffing:<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  -150g raw peeled shrimp cut into pieces<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  -100g of raw peeled shrimp in a blender<\/strong><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: justify;\"><strong>&nbsp;  2 tablespoons of&nbsp;diced bamboo shoots<\/strong><\/div>\n<p><strong>&nbsp;  -1 Chinese onion  <\/strong><br \/>\n<strong>&nbsp;  -2 slices of ginger, finely diced<\/strong><br \/>\n<strong>&nbsp;  -1 small clove of garlic  <\/strong><br \/>\n<strong>&nbsp;  -1 teaspoon of salt<\/strong><br \/>\n<strong>&nbsp;  -pepper  <\/strong><br \/>\n<strong>&nbsp;&nbsp;-three quarters of a tablespoon of Chinese wine (special wine for cooking!)<\/strong><br \/>\n<strong>&nbsp;  -a quarter teaspoon of sesame oil<\/strong><br \/>\n<strong>&nbsp;  -1 tablespoon cornstarch<\/strong><br \/>\n<strong>&nbsp;&nbsp;-30g of carrot cut in very small cubes<\/strong><br \/>\n<strong>&nbsp;  -1 egg white<\/strong><\/p>\n<p><em>Start by preparing the stuffing.<\/em><br \/>\n<em>Place all ingredients in a bowl and mix well. Start kneading it by folding it and working it with the palm of your hand against the table. This will take at least 5-10 minutes. Continue until you obtain a very soft paste with a satin appearance. Do not hesitate to flour the work surface with wheat starch. The disc will be almost 10cm in diameter. I strongly advise you to practice beforehand by putting a ball of the dough in the riavoli. Once this folding is mastered, we can re-spread this training dough. The explanations will be perhaps simpler in images&#8230; But you have to put a little bit of filling at&nbsp;&nbsp; edge of the disk, then close one of the corners by pressing well the dough to seal it, then fold back the rest of the dough taking care to seal well&nbsp;each time. You can also simplify your life and fold the disc in half! Continuer jusqu\u2019\u00e0 obtenir une p\u00e2te tr\u00e8s douce au touch\u00e9 et d\u2019aspect satin\u00e9. La rouler en trois boudins bien r\u00e9guliers et les couper chacun en 12 morceaux. <\/span><\/div><\/li><li id=\"wprm-recipe-282185-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">On va ensuite placer chaque disque \u00e0 plat sur la surface, puis l\u2019\u00e9craser avec palette en plastique ou le fond d\u2019une casserole, tout ce qui peut permettre de les aplatir. Il faut couvrir le reste des morceaux de p\u00e2te d\u2019un film plastique pour \u00e9viter qu&#39;ils ne dess\u00e8chent! <\/span><\/div><\/li><li id=\"wprm-recipe-282185-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ensuite avec un rouleau \u00e0 p\u00e2tisserie (pour les dim sums on utilise plus volontiers un rouleau plus fin), \u00e9taler le disque un peu plus finement. Il ne faut pas h\u00e9siter \u00e0 fariner le plan de travail avec de la f\u00e9cule de bl\u00e9. Le disque fera presque 10cm de diam\u00e8tre. Plus il sera grand plus le ravioli sera grand bien s\u00fbr, mais surtout un peu plus facile \u00e0 plier avec la farce \u00e0 l\u2019int\u00e9rieur.<\/span><\/div><\/li><li id=\"wprm-recipe-282185-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ensuite vient le pliage. Je vous conseille vivement de vous entrainer avant en mettant dans le riavoli une boule de la p\u00e2te. Une fois ce pliage maitris\u00e9, on peut re\u00e9taler cette p\u00e2te d\u2019entrainement.
