\nI recently found out that my nephews are teacup freaks. On family vacations, they asked for it for their breakfast (it’s true that it’s good in the morning too!). So I figured this was a good opportunity to make a big batch! This way we would be quiet for a few days… Well no, because they almost devoured everything in two days. The adults certainly helped a little, but these little things are finally eaten quickly! With a funny name and a color that has nothing to do with the taste, I offer you my version of tea crusts in their purest tradition.<\/div>\n

\nRecipe for tea crusts (for a 26X26cm mould)<\/p>\n

\nSweet dough (enough for 2 pies):<\/span><\/b><\/div>\n

\n<\/div>\n

210g of flour<\/span><\/b><\/li>\n

125g of cold soft butter<\/span><\/b><\/li>\n

35g of powdered sugar<\/span><\/b><\/li>\n

25g of almond powder<\/span><\/b><\/li>\n

50g of beaten egg<\/span><\/b><\/li>\n

vanilla powder<\/span><\/b> <\/span><\/li>\n<\/ul>\n
\nTea crust:<\/span><\/b><\/div>\n<\/div>\n
\n
- 450g almond powder<\/span><\/b><\/li>\n
- 400g of caster sugar<\/span><\/b><\/li>\n
- 250g of egg white<\/span><\/b><\/li>\n
- 1.5 teaspoons of liquid bitter almond extract (or vanilla, or orange blossom or matcha green tea)<\/span><\/b><\/li>\n
- green dye (yellow+blue)<\/span><\/b><\/li>\n
- powdered sugar for the decoration<\/span><\/b><\/li>\n<\/ul>\n<\/div>\n<\/div>\n

  \nPrepare the sweet dough. Place all ingredients except the egg in a bowl or in the bowl of a food processor.<\/i><\/span><\/div>\n

  <\/i><\/span><\/div>\n
  \nBeat with the leaf of the robot (this is the K) until the butter is incorporated. <\/i><\/span><\/div>\n

  <\/i><\/span><\/div>\n
  \nAt this point, add the previously beaten egg.<\/i><\/span><\/div>\n

  \nTurn on again just to incorporate the beaten egg but no more!<\/i><\/span><\/div>\n

  \nPlace half of the dough on parchment paper. Put the rest in cling film in the freezer for another pie!<\/i><\/span><\/div>\n

  <\/i><\/span><\/div>\n
  \nPlace another sheet on top of the dough and roll out with a rolling pin to a thickness of about 2-3mm. This way, no extra flour is added and the work surface and rolling pin stay clean.<\/i><\/span><\/div>\n

  \n<\/a><\/i><\/span><\/div>\n

  <\/span><\/div>\n<\/div>\n
  \nGrease your mould with butter or better still, with a release agent.<\/div>\n

  \nTrim the edges to get a clean mold.<\/p>\n
  \n <\/a><\/div>\n
  \nMix the almond powder and sugar.<\/p>\n
  \n <\/a><\/div>\n
  \nAdd the 250g of egg whites and the bitter almond extract.<\/p>\n
  \n <\/a><\/div>\n
  <\/p>\n
  \nPour in the green dye as well. This one is optional of course, but the tea crust is still curiously green! I used liquid blue and yellow, but if you have a powdered green dye, this would be perfect! <\/div>\n

  \nMix well.<\/p>\n
  \n <\/a><\/div>\n
  \nPour the entire mixture into the pan and cut the dough to 5mm above.<\/p>\n
  \n <\/a><\/div>\n
  \nThis way, you will have the right height.<\/p>\n
  \n <\/a><\/div>\n
  \nPut in the oven for 45 minutes at 180\u00b0C.<\/p>\n
  \n <\/a><\/div>\n
  <\/p>\n
  \n <\/a><\/div>\n
  \nThe tea crust is lightly colored but most importantly, the dough should be golden brown.<\/p>\n
  \n <\/a><\/div>\n
  \nLet cool for 10 minutes, then remove from pan and cool on a wire rack.<\/p>\n
  \n <\/a><\/div>\n
  \nSprinkle generously with powdered sugar.<\/p>\n
  \n <\/a><\/div>\n
  <\/p>\n
  \nCut into slices and store in an airtight box. <\/div>\n
  <\/p>\n
