It is a kind of flaky bread with fine durum wheat semolina. Without filling it is the &#8220;maareks&#8221; and with, it is the &#8220;m&#8217;hadjebs&#8221;. Most of the time, the m&#8217;hadjebs are garnished with tomatoes and onions simmered in olive oil, but it can also be sweet. I give you here the basic technique with the famous filling of the m&#8217;hadjebs. I find it very pleasant to prepare m&#8217;hadjebs and maareks, because it is fast, simple, traditional and delicious&#8230;<\/div>\n<div style=\"text-align: justify;\">\n<\/div>\n<div style=\"text-align: justify;\">\n<\/div>\n<p><a name=\"more\"><\/a>Recipe of the M&#8217;Hadjebs:<\/p>\n<p><b><span class=\"Apple-style-span\" style=\"\">-500g of fine durum wheat semolina (this is not couscous semolina)<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">-3-4 tablespoons of oil<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">-2 teaspoons of salt<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">-cold water<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">-spreading oil<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\"><br \/>\n<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">Garnishing of the m&#8217;hadjebs<\/span><\/b><br \/>\n<b><span class=\"Apple-style-span\" style=\"\">-3 tablespoons of olive oil<\/span><\/b><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-7 tomatoes<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-4 onions<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-1 bell pepper (red or green)<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-4 cloves of garlic<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-1 tablespoon of tomato paste<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-1\/2 teaspoon harissa<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b>-salt pepper<\/b><\/span><br \/>\n<span class=\"Apple-style-span\" style=\"\"><b><br \/>\n<\/b><\/span><br \/>\n<i>Gather the ingredients for the m&#8217;hadjebs (with filling).
