\nWhile I’m waiting for all the recipes I’m testing and perfecting, I’m posting a tarama recipe that I love. I think it is H\u00e9diard who proposes this version. I tasted it thanks to the show 100% mag. The result is really surprising and this association tends to perfection. It’s actually quite normal when you think about it! Wasabi is good in sushi with raw fish… In any case this tarama will undoubtedly delight the amateurs of strong sensations. The wasabi colors very little the tarama (we don’t put a kilo of it either!), so it might surprise (I hope pleasantly) your guests…<\/div>\n

\nRecipe of the “tarama” for 4 to 6 persons:<\/span><\/div>\n

\n-70g of bread crumbs (bread without the crust, but quality bread!)<\/b><\/span><\/div>\n
<\/span><\/p>\n

\n-1\/2 egg yolk (just take a little yolk)<\/b><\/span><\/div>\n
<\/span><\/p>\n

\n-a 280g bag of smoked cod eggs (or mullets if available)<\/b><\/span><\/div>\n
<\/span><\/p>\n

\n-170g to 200g of oil<\/b><\/span><\/div>\n
<\/span><\/p>\n
\n-1\/2 glass of milk<\/b><\/span><\/div>\n
\n-1 tablespoon of wasabi paste<\/b><\/span><\/div>\n

\nStart by removing the crust from the bread. I bought bread from Poil\u00e2ne, which has a dense and delicious crumb. It is very easy with a fresh crumb.<\/i><\/i><\/div>\n

\nPut the crumb in a bowl and pour enough milk to soak it completely.<\/i><\/i><\/div>\n

\nWring out the crumb in your hand. Remove excess milk from bowl. Return the crushed crumb to the bowl. If the bread still has a little milk in it, that’s good because the tarama will hold up even better!<\/i><\/div>\n

\nAdd half an egg yolk (this will not give any taste, but provides the protein needed to emulsify the oil).<\/i><\/div>\n

\nMix at low speed with an electric whisk for 2 minutes, to break down the proteins in the egg yolk and milk.<\/i><\/div>\n

\nAdd the equivalent of two or three spoonfuls of oil while still mixing at low speed. This will start the emulsion. The oil immediately begins to enclose itself in small “capsules” of water (which comes from the milk and thanks to the half-yolk).<\/i><\/div>\n

\nOpen it with a knife on one side. All that remains is to remove the eggs with a spoon.<\/i><\/div>\n

\nAdd the eggs (without the skin of the pocket).<\/i><\/div>\n

\nAdd the remaining oil in a thin stream, slowly rising just like a mayonnaise. <\/i><\/div>\n

\nDo not make the tarama with a blender as I read in some recipes! <\/i><\/div>\n
\nThen with an electric whisk, add the oil in a stream, very gently, just like a mayonnaise! I made my tarama on the fly, trying to get the best result possible. But I weighed everything before and after, so the proportions I listed above are the ideal ones for me.<\/i><\/div>\n
\nRegarding the addition of lemon, I prefer to leave it up to each person to add it to the tarama at the time of tasting!<\/i><\/b><\/div>\n
\nOnce all the oil has been added, mix well with a spoon, scraping the edges to incorporate everything.<\/i><\/div>\n

\nAdd wasabi paste to desired portion of tarama. It is better to go a little at a time, mixing each time and tasting until you get the desired degree. <\/i><\/div>\n
