\nSince the weather is so nice and I don’t feel like spending hours in the kitchen, I make quick salads that are not lacking in taste or good products. Today, pasta with pesto and sun-dried tomatoes. A tasty combination with the tender tomatoes and the “al dente” pasta. I made the recipe as a cold salad which is ideal for a picnic. You can do exactly the same thing in a hot dish. A big thank you to Peter and Peggy who made this recipe for our sunny picnic, which I made again the next day! A delight.<\/div>\n

\nPesto pasta recipe (serves 4 to 6):<\/div>\n

\n-500g of pasta cooked “al dente” (for homemade pasta, it is HERE<\/a>) <\/span><\/b><\/div>\n
\n-60g of parmesan cheese<\/span><\/b><\/div>\n
\n-60g of pine nuts<\/span><\/b><\/div>\n
\n-60g of olive oil<\/span><\/b><\/div>\n
\n-1 clove of garlic (or a little more)<\/span><\/b><\/div>\n
\n-1 small bunch of fresh basil<\/span><\/b><\/div>\n
\n-dried tomatoes<\/span><\/b><\/div>\n
\n<\/div>\n

\nPut the pine nuts, garlic and olive oil in a small blender. You could use a little more garlic, but I like pesto that is ultimately quite light, especially when I make the cold salad version. <\/i>

\nBlend on high speed then add the parmesan and basil.<\/i>

\nBlend until you have a nice smooth paste.<\/i>

\nCook your favorite pasta, here I make a cold salad with pasta well “al dente”!<\/i>

\nFor the cold salad, rinse your cooked pasta under cold water. Add the pesto.<\/i>

\nFor the dried tomatoes, boil them for 10 minutes. If they don’t cook, they will be very hard to chew! <\/i><\/p>\n
\nA quick note: I’ve done things separately here, but you can totally cook your sundried tomatoes in boiling water with the pasta! This will save you time. <\/i><\/div>\n
